Could anyone please point me in the right direction, I just passed my 7 year mark in HK - what is the process for the PR application?

You do not need tax forms. Go to Immigration Department in Wanchai and they will give you a pamphlet that tells you what you need. As cara said, it's an easy process if you have been here longer than seven years or at least show periodic activity (short trips in and out) in your passport for more than seven years. One thing I remember having to provide was a letter from my employer.
