Banana Bread

OK. Here's one to test you all. MY son loves banana's but we always end up with plenty going too black so I thought we'd make banana bread BUT 1. he is allregic to dairy so I need no dairy or butter;

and 2. I don't have an oven!


So does anyone have a receipe for diary free banana bread I can cook in a microwave!?

Well I have dairy-free cake recipes and microwave cakes recipes (including a banana cake one) but no dairy-free, microwave ones with bananas - except one for brownies.


Here are some other dairy-free banana recipes which don’t need an oven. Perhaps he might like one of these. In fact, he could probably help you to make them too. It’s good idea to get children involving in the preparation of their food, particularly if they have problems with certain foods; it empowers them, at least in my lay-person opinion.



Raspberry and banana sorbet

Serve 4 - 6


Ingredients

250g raspberries

1 very ripe banana (verging on overripe)

Juice of half a lemon

350ml sugar syrup

1 egg white


Method

1. Blitz the fruit with the lemon juice and syrup to make a purée and pass it through a sieve to remove the pips.

2. Beat the egg white to form soft peaks and fold it through the mixture just before transferring it to the freezer.


The banana in this makes the sorbet creamier, which is why children like it.




Banana cream

Serves 8


Ingredients:

4 large bananas

1 tablespoon honey

1/4 teaspoon cinnamon


Method:

1. Peel bananas, place on a tray and freeze for 2 to 3 hours (bananas will be frozen but not completely hard).

2. Cut frozen bananas into chunks and place in food processor. Beat until bananas are thick and creamy (this takes about 5 to 8 minutes).

3. Add honey and cinnamon.

4. Serve to children in an ice cream cone or serve as a dessert. If desired, replace in freezer for an hour or so.




Coconut and Banana French Toast


Ingredients

2 bananas

250ml coconut milk

180ml soy milk

1/2 tsp sugar

1/2 tsp cinnamon (optional)

bread

oil or margarine for frying


Method

1. Mash the bananas well and whisk together with the coconut milk, soy milk, sugar and cinnamon. Pour into a shallow pan or pie tin.

2. Dip both sides of the bread into the mixture, and cook in a lightly greased skillet over medium heat. French toast should be lightly golden brown on both sides.




Microwave Brownies

Serves 4 – 6


Ingredients

1 banana, mashed (not too large or will taste too strong)

170g sugar

60ml vegetable oil

1 teaspoon vanilla extract

115g plain flour

4 tablespoons cocoa

1/2 teaspoon salt

dairy-free chocolate chips


Method

1. Mix the wet ingredients in a bowl

2. Add the dry ingredients and mix everything together.

3. Put the mixture in a small microwave-safe dish that's been greased with cooking spray (or quick release spray).

2. Sprinkle with chocolate chips and microwave on high for 4-5 minutes (depending on how gooey you want them – the long the less gooey).


You can change the topping; try dairy-free chocolate sauce or peanut butter. Spread over the top and put back in the oven for 20-30 seconds.



I'm sure you know where to buy dairy-free chockie, but if you have trouble finding it, Little Giant in Causeway Bay sells it, including semi-sweet chips and dessert topping.

This is my mum's old receipe


Smash the ripe banana together with some flour and mix (up to you how much flour, less if you prefer to taste the banana). Heat oil in wok, when it's heated, slowly add spoonful of rolled round mixture in the wok and deep fry. Remove and drain when the outside is brownish.


I think it's some kind of Malay/peranakan dish (not sure).
