Hi all,
Need simple and easy to make recipes using fish, specifically halibut, salmon, tilapia fillet...
I'm getting bored with my basic grilled and poached fillets..
any interesting sauces or marinades?

with fillet in welcome or park&shop u can getthai green curry paste very simple cut fillet andput very little oil and half onion and fry and then put gee curry paste depand how much ur fillet and fry litl and then put little water a lime juice and some lemon leafs and put fillet salt adwhen it is start boiling but little coconut milk and clsed eat with steam rice

Bought a Seafood recipe book recently in Spore and had tried a couple, which does taste good.
Ginger sauce (2-3 servings)
Ingredients:
2-3 Tablespoon of oil
100 gm ginger (about 2 knobs), sliced thinly into strips
3 tablespoon of light soya sauce (preferably Kikkoman)
dash of pepper
Optional Garnishing : coriander,spring onion & some sliced red chillies
Method:
1. Grill, fry or steam fish.
2. While fish is cooking, cut the ginger into small strips. Fry ginger in the 2-3 Tablespoon of oil until golden brown. Remove and set aside.
3. When fish is ready, add the fried ginger on top.
4. Leave 1 Tablespoon of the gingered oil in pan, and heat up . Off the heat, add soya sauce.
5. Drizzle around fish with the above soya sauce.
6. Add dash of pepper and garnish.

Grilled Salmon with Bacon
Ingredients:
4 salmon pieces (from 2 cuts)
150-200 gms bacon
Seasoning for fish: 1 Tablespoon ginger juice, salt, pepper
Method:
1. Rinse salmon, pat dry & season for 30 mins.
2. Wrap each salmon pc (in centre)with 1-2 strips of bacon. Secure with toothpick.
3. Preheat oven to 200C and grill fish in the centre of oven, for 15-20 mins, depending on the thickness of salmon cuts.

Black Pepper Sauce with Butter
Ingredients:
1/2 onion (diced)
1 tablespoon garlic
20 gm butter and 1 Tablespoon of oil
2 Tablespoon of coarsely ground black pepper
1 Tablespoon of wine
80 ml cream
salt to taste
Method:
1. Add butter & oil to pan. Fry garlic to fragrant, add onion and stir-fry till softened.
2. Lower heat. Add blackpepper, wine and cream.
3. Season with salt.
4. Pour over fried or grilled fish.
You can garnish with some slices of stir-fried green peppers or tomatoes.

I do a super simple marinade of 1/2 mirin 1/2 soy. Mix, and cover the salmon in the marinade for 30 minutes. Then you can grill, fry, or roast in the oven. All tastes delicious.

Honey mustard and then bake (or broil) as you normally would. Literally, mix honey and mustard together to taste in a bowl, and then smear on top of a fresh or frozen fillet. It's completely brainless.

meiguoren, i'm interested in the honey mustard. It looks to me that mixing honey and mustard will give something thick and sticky. Do you add water to make it thin? On fish or pork chop, do you cook the sauce before pouring on? Thanks!
