Get her an Octopus card, a simcard for her cell phone, a map and some suggestions on where she can go and let her explore HK. We did that with a similar visitor we had months ago and it worked out OK

I second the above ideas. Don't feel that you have to entertain her. Ask her what she's interested in and be ready with some sources of information as to where she might go. If they're things that you like to do too, you can go with her, but don't feel that you need to spend 2 weeks 'dragging her around'. If she hasn't travelled much before (unlikely in this day and age, but possible) you may want to spend the first day or two introducing her to the public transport system, but otherwise just giver her a map, a guidebook and an Octopus card.
