Trains from Hong Kong go to Guangzhou, Beijing, Shanghai; however, they are 'sealed' and you are not allowed to get off the train until it reaches the destination where you are processed through Chinese customs and immigration.
It is much better to get on a train within China; then you can freely get on and off at each stop.
Chinese trains are VERY comfortable. Last August, we travelled with our two small children from Shenzhen to Hangzhou (23 hours). We had an air-conditioned private room with 4 beds (soft sleeper). There is a dining car and boiled water is readily available. There are also lots of opportunities to buy fruit and other snacks on the train, as well as local specialties at each stop.
It is absolutely delightful to watch China slowly slide past your window.
