My husband (he's a local Hongkonger) says that a red packet with a minimum of HK$500 is the norm. This is what everybody who's invited to attend gives (this is irregardless of whether or not you actually attend on the day). If your colleague has invited both you and your partner, this will amount to HK$1,000. So anywhere between HK$500-HK$1000 is good.
