If you sign a contract with one company, and decide you dont want it as another company has provided you with a better offer, are you binded by the first contract if you have signed it? or can you just call and say sorry.....

hi curios, i think it depends on the starting date in the contract. if it's past that date already, then i guess you'd be binded by the agreement. my two cents.

You signed a contract of employment - "not started yet" is not really relevant, is it?
Is there a probation period? Is there a get-out clause in the contract?
If no to both, then the company may treat the requirements (e.g. the length of notice, or amount of wages in lieu of notice) in the same way as a continuous contract of employment.
