It's hubby's birthday tomorrow and I would like to bake his favourite cake. It's kind of a moist butter / pound cake with dried fruits (raisins, sultanas, cranberries and orange peel).
Can anyone please give me a tried and tested recipe? Thanks!

Ingredients:
250 gms butter
250 gms sugar
320 gms self raising flour
6 eggs
1 tsp salt
2 tsp vanilla flavour
Dried mixed fruits - quantity as suits you (the original recipe used 530 gms but I find it too much. i've used about 250 gms)
- Dust fruits with some flour. (Optional: can be soaked in rhum for a few hours prior to dusting)
- Grease baking pan and dust with some flour.
- Cream butter and sugar until white and fluffy.
- Beat in the eggs, one at a time.
- Add flour little by little in the mixture. Mix well but do not over beat.
- Mix in salt, vanilla flavour and dried fruits.
- Pour mixture into baking pan.
- Bake at 240 degrees for 5 minutes. Lower heat to 180 degrees and bake for 40 minutes more.
