Knife Sharpening

Hello,


I am trying to find a knife sharpening professional somewhere in the Central Area. I have nice knives so I would prefer NOT to have it done on the streets of sheung wan, nor do I want to attempt it myself with a whet stone.


Any suggestions?

Thanks a lot Bruce. I have actually looked in the yellow pages, visited to the Wa Hing Cutlery store in Wan Chai and checked out the last place on Des Veox Rd, as suggested pre previous posts. I was looking for some NEW feedback, hence my recent post.

there's an old man that goes around midlevels shouting something in chinese... actually i was told he goes around the area announcing his trade which is sharpening knives and scissors...

Maybe someone in shops (e.g. Pantry Magic, Panhandler) etc. that sell reasonable quality knives can suggest a different professional knife sharpener, though it would be good if you could learn how to do it properly yourself as it would save you much time and angst.

You can do it yourself,


go to any hardware store and buy a steel. It's a rod of rounded metal with a rough surface. hold the blade to 30 degrees and swipe away (there must be some youtube vids to show you how). I used to be a chef and as such buy knifes with a soft metal and I always sharpen my own.


You can buy some jap knives that will last for years but they can cost the earth, I go cheap and look after my own.

meeligan said he doesn't want to try to do it himself, which I can totally understand if he's paid out big bucks. Maybe a kind-hearted chef or even former chef could offer to teach him 1:1 :)

I can do it for you if you want, but I'll warn you now, it won't be considered cheap.

I'm a collector of knives and swords and also make knives.

I can sharpen, by hand using various grades of diamond hones, blades up to 12 inches in length that will shave hairs from your arm but it will cost you a few hundred dollars.


Your decision if the knife is worth it or not.

i will get my butchers to do it for you, pay what you want as a tip.

drop off and pick up in tst.

but only if they are good knives to start with.
