Guilin is amazing, well the cruise from Guilin to Yanshuo. Dali is also lovely which is in the moutains and has one of the most amazing temples (sorry the names escape me and i am too lazy at the moment to dig up my LP), and the old town of Lijiang is also not to be missed. From here you can go to Tiger Leaping gorge and several moutains which are wonderful. We did a trip that included the above and it was really good, we organised it all ourselves and did internal flights as we were travelling with a toddler and it was amazingly easy.
