There is a great deal in the press (both locally and internationally) about the lack of places at HK schools.
We are thinking about fee-paying primary schools for our son - are there any tips/pitfalls we should be aware of? When should we be registering him? Any recommendations for HK schools?

It really depends on where you're from and what kind of education you want for your son.
There are some very good local schools but demand (and competition ) for places is very high. Your son may also have some difficulty in local schools if he (and his parents do not read/write Chinese/Cantonese.
Depending where you are from there are a number of International schools options, French, German Swiss, HKIS, Canadian, Australian and more. ESF has most options by number of schools and places but as you already know, competition for places is tight.
For ESF you need to register the September before the school year your son will start Y1 (i.e. register NOW to start next August). The ESF primary schools are much of a muchness in terms of teaching etc. (Our son is at an ESF primary school and is very happy which is as good an indicator as anything. )
For the ESF and the 'international' parts of French Intenrational etc. english fluency is normally a priority.
Try and visit the schools you are considering before you commit yourself.
