Are you looking to sue an insurance company or a medical professional? If it is the former, then it might be harder to find such a lawyer who will be willing to represent you to sue the BIG guys.

I am not sure if there are lawyers in Hong Kong who specialise in suing medical professionals. Try calling the big firms in town with large litigation departments. Your problem would be to find another medical professional to testify against the one that you are suing.
