Looking for the real saurkraut - sour/pickled cabbage. They used to have it at Great, but now they only have the "champaine" version with grapes which is too sweet.

Any suggestions?

Where did you buy it?

If it's the red cabbage - that one tends to be sweet - good with sausages or roast pork.

If it's the white - very sour kind (that's what I'm after) - you can cook it with some pork (cubes), add some sweet red paprika and sour cream - that's Szegedin goulash - Hungarian dish. At least that's what my mother told me.

I normally cook Slovakian cabbage soup with it. There are two kinds - one thick, when you leave the cabbage in (plus potatoes, sausages).

The other is what we used to cook for Christmas dinner - using mostly the juices from the cabbage, so you ended up with clear soup with sausages and small dumplings instead of potatoes.

HKPJC - Have it with barbecued sausages and mash. You do need mustard for the sausages though...

not being sarcastic or anything - am just wondering - HKPJC, how does one buy sauerkraut by accident? What did you think it was at the time?:)

Dive bum - The Schnurrbart in LKF is doing Schweinshaxe with Sauerkraut. It comes initially with mash, but I am sure you can swap that for potato Salad. No. 2 on my Schweinshaxe list would be the Biergarten in TST (Hanoi Road).
