I believe there are some laws that may still apply - I heard once that volunteering in proper businesses without a work visa may be deemed illegal as it possibly "takes a job away" from someone the company would otherwise have to hire... crazy but I heard it...

You are not allowed to do any sort of work in HK, whether paid or unpaid, unless you have a valid work visa.
