I'm not Australian, American or HK, so maybe not a good source for this question!
I suggest having a civil ceremony here in Hong Kong and then doing whatever YOU want in Australia - with no worries of the legality of your marriage because the HK marriage certificate will be legally recognized in Aus, USA and HK (and everywhere else).
We were married in China and then had a lovely re-taking of our vows and a great reception in Canada!
