This post took me back to my childhood and making coconut ice! Too sweet for me now...
I think your recipes must be from the US. The sweetened stuff is made by adding sugar (and preservatives) during the processing so I'm not sure how you can make in your yourself unless you take one fresh coconut...
You could try using desiccate coconut and add a little more sweetener to the recipe although, as US sweetened coconut is 'wetter' than desiccated coconut, the result might be drier. Alternatively make a sugar solution and leave it soaking it that; it would probably need to be used asap as there's nothing to keep the dried sugar on the coconut.
Perhaps also give Gateway a call; it sells US products so it might have it there.
