Anyone got good recipes for espresso or chocolate pasta... I searched anywhere but cant find something like this??

I wish I had that cookbook with me. But in general, to make colored/flavored pasta, you add that ingredient but ensure that the dough consistency remains the same as normal pasta by varying the amount of durum and egg/water.
You should probably experiment with small batches. Basic egg pasta dough is 1 egg to 100g of durum flour and a pinch of salt. Knead or use a (powerful) food processor until it's even, then do it some more. The more you work the dough the better your pasta will be.
There are plenty of variations:
Spinach->Green pasta
Chocolate or squid ink->Black pasta
Red beet or tomato->Purplish pasta
Carrots->Red pasta
Orange pumpkin->Orange pasta
