Hi,
Is it ok to use cream in the cooking for a 13month? Also I would like to introduce mushrooms for my little boy, which type of mushroom would be safe?

Cream is ok, but go very slow at first. It takes a few weeks/months for little tummies to get used to rich foods (unless he already eats yogurt). As with most new foods, start with a teaspoon or two and see what happens.
Mushrooms are absolutely fine. Our 10 month old has been getting them for a while now (after a quick stop in the food processor). Your typical Australian buttons are just fine as a starting point. In any case I doubt a normal grocery store would sell any toxic mushrooms.

Indeed. Our 10 month old has carrots, garlic, pork, chicken, fish, peas, rice, pasta, corn, papaya, mango... All in gum friendly mush format.

Careful with the corn. Our #1 couldn't take the husks until she was well over a year. She puked the corn up after half an hour. So we boiled the corn and then use a food mill to press the "meat" out of the husks. At around 15 months she was fine with the husks so we went over to a food processor and just pureed the whole shebang.

And even before. As Cara mentioned, there are no magic foods that babies can't eat as long as they're 8-9 months old. They may not tolerate some things (or large quantities of some things) yet, but unless there are allergies involved they can eat anything.
Our #2 would get pumpkin, cheese and tomato risotto (pureed of course) at around 9 months.

By 1 all ours where eating mashed up versions of our dinner. I never cook with salt anyway as I hate salty things, but I've always used garlic, herbs etc since they were babies. The only one I've ever cooked separately for was my son who had food intolerances, but for a long time now he;s eaten the same as us..

I have heated the pan with olive oil, can then add some leeks and onions, stir for a bit and add the grains. I fry the grains for a while but they don't seem to "burst" as some cook books say they would.

With respect to risotto, add the liquid one ladle-ful at a time and patiently stir. When you are frying the grains, they won't burst, but they will change colour. As soon as they do, then start adding the liquid.

"Burst"? I dunno. It gets mushy.
You have to use the correct rice, which is Arborio (AKA "Risotto Rice). Then do as Ruth in Canada says, except for the constant stirring. I know all the cookbooks say you need to, but I have found it works fine without.
1. Fry the onion and rice in olive oil so that the rice absorbs some oil and changes color to golden brown.
2. Set heat to low.
3- Add one ladle of hot/warm broth.
4. Stir.
5. Leave along until it you can't see liquid anymore, and perhaps 20 seconds more. Maybe 4-5 minutes but it really depends. It is a pretty forgiving method though.
6. Repeat steps 3-5 for around 30 minutes. The time varies but the rice should not be al dente anymore. 6a. If you add other ingredients, do it near the end. Saffron, mushrooms, asparagus, shrimp, parmigiano all work well.

Hi Germaine,
Just a note regarding tomatoes - both the girls tried it after 1 year and both had a mild, not severe bottom rash. Although my younger one was fine after a month when I tried it again. The funny thing is, she can take the tomatoes from Organic bottle food (used in case of travel only) even before she was 1 year old.
The corn is fine but how about using organic polenta first?
