6 hrs at Sydney airport: what to do?

I have booked flights which result in me having just over 6 hours between flights at Sydney airport.

I am flying with my three children aged between 3 and 10. So is there anything to do to fill up the time? (please say yes!). Is it possible to get out of the airport and take a bus trip to see the sights? Or will we be stuck at the airport as we are only connecting in Australia?
