It very much depends on what sort of education you want, UK or North American.
ESF is well established and has a choice of both primary and secondary schools (catchment area depends on where you live). It has a good reputation for the results achieved by the kids and all schools are moving to the IB system.
Location and cost may also be a factor. Canadian and HKIS are on the south side of Hong Kong while ESF has a number of primary schools around HK Island, Kowloon and the New Terrirotise. Fees for ESF are much less than the other 2.
You should visit the schools first if you can and see which you think your child would be happiest at.
