You need a US passport for your baby first.
If you have not gone to the US embassy yet, then you don't have enough time. (but try citizenship service anyway, maybe you'll get lucky.)
If you are only going to the US, just bring with you whatever proof of birth document you have. (best have it certified at the embassy. Allow extra time at the airport, and you should be fine. Once in the US, you can apply for her passport, birth certificate, social security from home.

She does have a US passport so now do i need to bother getting a visa or can i just bring her China birth certificate with me to the airport?

you might need to get a visa to take your baby out. It usually takes about 4-5 working days (at least in shenzhen).
You need to take your passport, baby's passport, birht certificate etc and apply.
You ahve 30 days period (after the birth of the baby) to apply for this. if you don't apply for a visa with in this period, they can fine you 500rmb per day of overstay.
But are your chinese holding US passport or american? I think the rules are different if you are of Chinese origin.
