Hi
I'm planning to open an office in Central HKG and move there with wife and daughter around August this year. Missus is chinese while our kid and myself are french.
I already control a small hardly active company there but will set up a new structure.
Could you advice us on the formalities to go through to get residence permit for us all? One work permit will be enough to begin with.

Well firstly you will need to deal with Visa's. You will need to get either an investment visa or a work visa based on a solid business plan that will also include plans to employ locals in the future.
You say your wife is Chinese. Is she from the Chinese mainland, and secondly if she is then does she still hold Chinese citizenship? If this is the case then I'm afraid getting a visa for her take several years, it currently takes between 5 - 7 years for a mainland chinese to gain a dependent visa to a HK permanent resident. She would need to get visitor permits from her home city to stay in HK for short periods of time.
You're daughter however can get a dependent visa based on your own visa.

Besides are the work visas difficult to obtain, even for non chinese? The company I'm setting up is completely legit, and will be used for participation in a bunch of international trade fairs.

The visa for yourself will be difficult to obtain but you can of course try. As for hiring your wife, well that would be next to impossible.
