Does anyone know how much flight attendants earn? What is the rate for flying long haul?

Depends very much on the airline, on seniority and on how the airline treats seniority. Also it depends how long haul is considered by the airline. This varies too. It can even vary by route. I'd say in the US you start around USD 25k/year and go up from there. No idea about Cathay and such.

Sure, if your waiter is also in charge of safety and evacuation of the restaurant in case of fire or other emergency.
Flight attendants are pretty highly trained to deal with a wide variety of situations. Also, the waiter/waitress job is very different in the air due to space and other logistical constraints.
