One of my favourites is that Swiss shop in IFC, Teuscher. Compared to Teuscher, Godiva's chocolates are tasteless. But then again, the prices charged by Teuscher are a bit excessive.
As in local shop, I remember that there was a shop in the street parallel to (lower) Elgin Street - the one where you take steps down from Staunton (hope the shop still exists and hasn't moved). They make home-made chocolate and desserts etc.
And of course - Mandarin Oriental Cakeshop. Haven't tried the chocolates there, but they look great and are HK made.

Also, there's the one in Horizon Plaza, Ap Lei Chau called Monde that makes them everyday. They do bespoke ones as well I think.
