I need sponsorship/ work visa to work in HK, but does anyone know if I have to be employed full time? Can I apply and only work part time?

Yes, you usually have to be employed full time and provide a special skill that is not available locally. The immigration department rarely approves work visas for part time jobs, but it is not unheard of. For example, I know one guy with a Ph.D. you got a working visa for a part time position at one of the local universities.
