how to cook soba?

do you have any recipe to cook this japanese noodles?

Drop into boiling water, stir around carefully and leave for the time it says on the pack - if it is in Japanese, try 3-5 minutes and then drain immediately in cold flowing water. do not boil for too long or they go all claggy and sticky and do not taste very good. If you get the fresh ones, they do not take too long to cook. The dry ones I haven't tried.

Once you've cooked and rinse them (cf. BIENE's answer) you may want to do the following :

1) Hiyashi soba : cold soba you can serve as a kind of cold salad.

2) Put them on a special dish (king of tray, doubled with a small bamboo mat - about 10 HKD in Jusco 10 dollar shop - not necessary, but looks better + drains the soba) and serve them with a bowl of Tsuyu for soba (special dressing): take some soba with your chopstick & dip them in the Tsuyu.

put soba in boiling water, when the water boils up again and about to overflow, add a bit of cold water to lower the temperature, continue boiling until desired doneness. the cold water procedure makes the noodle texture slightly firmer.
