I did search on internet and shelf life of fresh eggs is 2-5 wks. How come they are already 1 month old? I thouhg they normally have the expiry date on them not the day when they were packed? Might be wrong tho

On some boxes you have only the expiration date (sometimes september 2008!! my go...) and on some other ones you have the day they were produced (depends on the brand), and in that case it is already one month earlier!!
In Europe, You can buy eggs only a few days old and in the worse case 2-3weeks...

Some brands sold in City Super show both dates, and sometime it's less than one month.
Wondered wether the "production date" included the expected "conception date" - the same way people would count the age (including pregnancy) in the traditionnal chinese system...
Can someone confirm / correct it, pls ?
btw, for those who are interested, this is what general wisdom says about eggs in my country (France) - eggs should be intact (with intact shell) and broken just before cooking:
1 day max (from the moment the egg has been laid): raw eggs OK
3 days max : can be used raw for mousse au chocolat, or à la coque (medium raw recipe)
7days : any dishes with throughly cooked eggs
7 to 21 days : only fully cooked in pastries, etc. as the "fresh taste" is not there anymore (though perfectly OK to eat, as long as the shell was intact before breaking the egg)

Hello,
i've found some "rather" fresh eggs. They are sold in the Green dot dot organic food stores (or corners in some MTR stations).
An advantage is that the range sold is organic and does bear production date as well as past consumption date.
