How to cook beet roots?

I am not a good cook but I bought some fresh beet roots from the local market. I usually cook it like cooking potato and feed my kids but what else can i do with it for kids? What is / are the best to go along with it for lunch and dinner?

In Sweden this root is widely used. One way is to boil it like you do and serve it with a little butter.


Another is with a classic Swedish dish called "Pytt i Panna". Here is a recipe I found with Google. http://www.grouprecipes.com/sr/15709/swedish-hash-pytt-i-panna/recipe/.


It's a pity you don't know Swedish as you can find dozens of beet root recipes in that language...


The Russian are also big on beet roots, most notably as one of the main ingredients in Borsch: http://www.cooks.com/rec/view/0,1648,149177-226201,00.html.

I boil it as well. We normally eat it as a salad by adding chopped tomato and onions. Garnish with chopped coriander. Add salt/ black pepper to taste. You can also add a tiny bit of lime juice for added taste, if you'd like.


My mom also boils it, but grates it afterwards and adds it to plain yoghurt. Add salt and tiny bit of sugar to taste.

I forgot to mention that Pytt i Panna is often served either with a fried egg or even a raw egg in half the shell. You mix the egg in when it's on the plate.

indeed, as in sweden, we russians are big on our beetroot as well (bortsh - betroot soup is fantastic for example). I personally peel it cut in chunks, drizzle in god olive oil and roast (wraped in foil) then - still warm - more olive oil, balsamic vinegar and fresh basil - fantastic side dish to anything - even my 2yr olds like roasted beetroot..

as a main meal, I give my little boy beet root, cauliflower, lentils and potato, he seems to think its yum. Beet root from the local market is good, but the Aussie ones taste even better. They're available at some Wellcome and 360. For adult version, we toss cooked beet root with green beans, red onions & feta cheese with olive oil & lemon juice (Jaime Oliver recipe), very good.

It is. While beet roots are not part of the core recipe, they are traditionally served with it.

well. I cooked the the pytt-i-panna for lunch yesterday. My 1.5 year old son finished the plate without any problem. I dont know whether i got the exact taste as the swedish but he sure finished it just as any other food that I served. Yes -sa, for adults I made salad with it and was also thinking of boil it as like potato but add yogurt for my kids. i will surely have this root more on my family meal!

:) You probably did. In any case the taste is pretty variable because this is a "leftover management" food where traditionally you would throw in any meat you had lying around.
