I'm considering buying a motorcycle and parking on a monthly basis in a wilson car park in Tung Chung, what is the real theft risk if the bike is locked? Is there any storage facility that would be a better alternative.

Well; mine was stolen from paid car park with security (old Chinese guys). They drove in with one bike, did my locks, and out with mine. So i was left with a stolen Town Gas bike in end (that i could not keep...).
So yes, its a risk, but go for it. If you can; do what is manageable to make it harder. A chain that is anchored helps (the garage i used said they would allow it after the bike was stolen).
Are you buying new or second hand ?. Bigger bikes used be less atractive for theft here but now they take all incl. Harleys etc.

I think it also depends on what kind of bike you have. Honda CB400's seem to be the most popular targets for bike thieves. I think there's a monthly list that the HK Police publish with the types of bikes and cars that have been stolen, and the locations they are taken from.

Where can I find the list of stolen bikes an locations? The bike I'm considering is an FZ6-N and I want to buy new. I'll use a chain and cover (what little security they give)

This is what I found for April - scroll down past the cars, and you'll see a list of bikes. This list is originally from the police website i think.
