how to cook tuna?

nice fresh tune should be cooked litelly for a min each side max - it should still be pink in the middle - pretty much "meduim/rare" - otherwise you end up with something similar to tinned tuna - not much point - still even overcooked should not be hard....

Coat it lightly in pepper and then on a very lightly oiled pan on high heat just sear the outside leaving the middle pink and raw absolutely delish.


I prefer to eat my tuna raw, sashimi style but then I know where my tuna comes from, I catch my own. Never eat tuna straight from the sea. There is a bacteria in the tuna that will make you s**t through the eye of a needle. You need to bleed the fish properly and run a bleeding rod through the spine. Then put the raw filets on ice for at least 1 hour to get the temperature down to under 5 degrees that should kill off the bacteria. Cut to 1 cm thick pieces dip into wasabi and kinkomen or freshly squeezed lime juice with rock salt
