Beef Gelatin in HK-style Beef Curry

I recently had a beef (brisket) curry dish (at a local rest.) and it was pretty good....it had some kind of "gelatinous" pieces in it too. I was wondering what is that and where do you buy it? I've never seen it in the meat aisle.

I think it is the overboiled tendons of cattle. Not sure but i think you can get them dried in the dry provisions stalls in the wet markets. You then soak them in water to re-hydrate them. In Cantonese they are called "Ngau Gun" Ngau= cow Gun=tendon/muscle. I have seen some pre-packed in P'N shop before.
