I would stay in the Intercontinental as it is newer and improved thought both are good and both have pretty good bars with live bands. If you are coming from HK the best place to cross is either that the ferry to Shekou which is very comfortable or take the bus from the Wanchai exhibition center. Taking the KCR is one of the slower ways because the number of people and the number of stops. If you do though you can take the Shenzhen MTR all the way to the OCT or windows of the world stop. For restaurants near the Theme parks you mainly have what is in the Hotels but you can also look into the Chinese restaurant street near Splendid China. For restaurants in Shekou try The Terrace.
