Just moved to HK. Apartment block only has normal phone jack, what does this mean in terms of internet services that I can use? What ISP do people recommend? Can I use a wireless router with a normal phone jack? Any help would be really useful.

DSL works through a normal phone jack so no problems there. If the phone jack says PCCW call them up. They work fine.

Yes, you can use a wireless router. That is independent of how you connect to the Internet. PCCW include a wireless router with many of their subscriptions.
