by your description they are obviously snobs, so bring them to the peninsula for afternoon tea.
you can take the ferry from central to TST for that (upper level of course and seating in the aircon section but not right underneath else they could get a cold) and then do shopping in harbour city (lcx might be fun but too low class, so you can check our the groundfloor at the back end of harbour city so they can get cheap burberry stuff).
- the best museum in my view is the museum of coastal defense in shau kei wan or the hk art museum in TST
- harbour cruise with aqualuna of course! since when are you in hk again?
- ditch the aberdeen boat (you don't want to go that low), but you could chose to go to sai kung for picking fresh food (or even better take a ferry from aberdeen to lamma sok kwu wan)
- last but not least, she is teaching architecture on heritage buildings? calls for a tour through central/soho to see hk heritage (as far as it's left); sun yat sen museum and medical museum might be a good start
last last but not least, they can't be that stiff as you describe, so show them what people really like about hk (ferry rides, a walk through sheung wan to see the dried medicine food in the street stalls, a dinner at the cooked food section of a fresh market, a drink in wan chai plus the always-a-hit temple street night market)

Please no... If you want decent dim sum go to "Dim Sum" (yes, that's what it is called) in Happy Valley. Not very posh but quite a cool place and good food.

- Instead of taking them to the antique shops off Soho, Stanley market?( you know the shop that is in the back?) They enjoyed talking to the shopkeeper and negotiation!!
-Tea museum in Hong Kong Park to throw in some history of Hong Kong.
- Jumbo dimsum, very much.
- Spa, they loved the spa at the Mandarin Oriental very much.
- Bird market, flower market in MongKok or Ladies market finishing up with brunch at the intercontinental or tea at the Penninsula. But, I think they were a bit overwhelmed with the crowd and many things one after one another.
-Macau, Cirque de Soliel show.
- next time they come, planning to take them on a Junk trip to the outer beaches.

driver less so as you will spend more time trying to find a parking spot than seeing things. i suggest taxi, MTR, ferry and walk like real hk.

Quite agree with xpatguy about dimsum, the Happy Valley place is great and a lot less tacky than jumbowatsit. Never tried it myself so can't comment on the quality of their food, but Dim Sum Happy Valley don't use MSG, their food is always fresh and you CAN taste the difference.
Tea Museum definitely a good idea (won't take very long, tho, so fit in other central things around that, or follow up with the Peak Tram), as well as cokkie 09 suggestions of SYT Museum and other heritage things.
As for Lantau, i really think it's worth a look if you have time, and not necessarily for the giant buddha, but for the sights, the water buffaloes and the villages. O'seas visitors are always pleasantly surprised to see there's more to HK than an old temple stuck between two bank office towers.

to be honest tho, with ONLY ONE DAY, i would probably stick to HK Island as well, more to see close together, far less time wasted in transit, though I agree that Kowloon and NT have as much if not more to offer

Different sunscreens are good for different people. Skins are different after all. So you should try a few and see. As for insanely high SPF numbers, pretty much anything over 30 is just sunblock. Calling it "100" can pretty much be seen as a marketing exercise.

I differ from the view above, do as much as possible and absolutely wear them out.
Very early start assumed, here goes:
- Lok Yu tea house (Stanley St - read up on breakfast murder there so you can tell the story, eg he ate and paid then shot the guy to the death and he was sitting just there and there, make that part up maybe)
- walk east to Entertainment Bldg, wind your way thru to Exchange Sq (boring buildings but lots of people/things will wizz by and the crowds on way to work - it is different from anywhere else, that's the point, plus it is how most of us would get around)
- catch a double decker bus, sit on top at front row (otherwise a waste) - wizz thru HK wondering which signs and people will get hit
- Ocean Park - pandas, chairlift, reef atoll, escalator (stop at others if take your fancy) - it is the views, and our friendly visitors from the north, and pandas ... (a cultural experience not to be missed, it is not an amusement park)
- taxi to Aberdeen, lunch at Jumbo or other place (lunch)
- taxi to Peak - do the loop walk (45-60 mins) or the shorter harbour walk (30 mins)
- drinks at Cafe Deco - the view is what you are there for, so no saying I like the other place so much better, NY has lots of trees and places with outdoor spaces
- alternative drinks at TOTTS / Mandarin after Peak Tram
- Peak Tram
- taxi to Star Ferry
- Star Ferry and Aqua Luna at sunset (drinks)
- dinner / Happy Valley horses is great idea
- result: two satisfied (and very tired) visitors
If they want to shop, they will know what they want. If they don't, well don't take them shopping.
HK has better views, better sights, better sounds, better smells, better transport etc. Show them what you love and not what you think they will love, and it should be fun. Get your walking shoes on, take some water with you, and enjoy the day....

temples and the locality of hong kong- communities like sau kei wan, or the hong kong natives in NT, village houses, the outlying islands-peng chau is my fave.
