Chiang Mai for a week?

I plan to take my girlfriend to Thailand for a week. We think a beach holiday in Phuket may get boring quickly (we're not into diving or anything like that) so we're thinking about Chiang Mai. Is Chiang Mai distracting / interesting / beautiful enough to warrant a whole week?


We've never been to Thailand at all so we'd be grateful for any advice. Thank you!
