Some nationalities can obtain a 5 day Shenzhen only visa at the border between HK and Shenzhen - I know for a fact that Australian and NZ passport holders can do this. Other nationalities need to apply for the visa in advance. Not sure about US passport holders but there have been previous threads on this if you do a search for Shenzhen visa.

You can apply for a single entry visa. After you have had a single entry you can then apply for a multiple. I did and now have a multiple and am often popping up there.
