This one is a bit of mystery to me. I am not much of a butter expert but I know it "shouldn't" last much more than 3-4 months, even if salted.
Anchor says "pure butter" and as I see it that means "only stuff that comes from a cow". But without any form of preservative, how do they get two years out of it? I am going by the production and expiry dates on the packet. It tastes great and all but this feels a bit fishy.
Does anyone have an explanation?

Not sure how that can be possible.
Was recently in a grocery store in Canada and I saw pre-cooked bacon stacked in the aisle without any refrigeration. I picked a pack up and read on the back that cooked bacon will keep at room temperature for weeks... Perhaps the makers think that is a selling point but I think this raises the red flag re: chemicals in such a product that keep it from spoiling...

Well, there are antiseptic juice packs that are fine without refrigeration. But Anchor Butter packs are just foil. Hmmm...

Butter is just fat. Much like the tins of cooking fat that can hang around forever without refrigeration, I'm pretty sure that butter is fine if kept in the fridge.
Usually any mold on butter is due to things being added through usage eg the bread crumbs on your knife.

Well, why then does it say "pure butter"? There's nothing on the packaging about preservatives.

Butter will go rancid if kept in warm temperatures, if kept in the fridge it will last a long time - if unopened. Once you open it, watch out for change of colour (parts may turn yellow) - then you shouldn't eat it as it signifies melting and change in chemical processes which could make you sick.
