I am British and my husband is Canadian and Amercian, but we reside in HK (and have permanent HKID cards), so if our child is born in HK- does it automatically get British and Canadian citizenship?

We are exactly the same as you- our HK born daughter has UK passport from mum, US passport from US/Canadian dad, but is not eligible for Canadian because her dad wasn't born in Canada & he had only one Canadian parent & so he can't pass on the nationality.

I am Canadian and husband is Australian. My kids were born in Australia and we had to apply to the Canadian Consulate to get a Canadian citizenship card. After this i could get them a passport but have not yet, they just have an Australian passport. Just call each consualte and find out what you need to do.
