I'd have to say the following - in no particular order:
Lemongrass in Saigon, Vietnam - been going there since the mid 90's and it's a Do Not Miss.
Fernando's in Macau - great food, great ambiance
D'Hana in Bali - probably the best Japanese food in the world.

I have to throw in Scirocco on the State Tower in Bangkok. The food is good (not exceptional) but the atmosphere and views are absolutely unbeatable

View Point is set in a restored colonial style property on the river leading to Lake Inle - great ambiance, great staff and superb food.

Eng Seng in Singapore for Black Pepper Crab - unreal, best crab I think I've ever had.
Original Din Tai Fung in TPE - a cut above all of the others
