What I usually do is simmer some cream and add bacon, onions and some tomato sauce (not ketchup!!) and mix together on a low heat and add a little bit of sugar. what you then get is a tomato cream sauce. The same can also be done with boiled/steamed pumpkin to make a pumpkin cream sauce.

Hi rick888hk,
First in order to make a succesful creamy sauce you need to be able to buy items such as full cream, butter and hopefully pamigiana. Not to mention tomatoes that actually taste like tomatoes-preferably have some basil at hand as well. In a few tablespoons of virgin olive oil, sweat the onion until it is soft and changes colour, add some garlic(to taste) this wont take long . Decide what you are going to use bacon, ham, mushrooms or whatever. Chop the tomatoes into the same size pieces and add to the pan with a pinch of basil.
Now, add at least one maybe two glasses of white wine, maybe a Chardonay add at least one maybe two tablespoons of chicken stock, let it bubble and combine (taste for salt and pepper)
Now add the cream ,let it bubble but not boil for a few minutes ,it will start to thicken up add butter at least a large tablespoon. Voila!
PS the best site on the web for foodies is 'THE GUARDIAN' Newspaper in the UK. Their recipes and food writers are superb and can't be beaten. This recipe i just offered you is my own, its not part of their reprtoire.

Hi There
I am sure you have already tasted or tried Spaghetti "Carbonara" but let me share the recipe anyway with you, it's very simple though:
You will need to buy:
- 2 Eggs
- 250 ml single cream
- little bit of milk (full cream)
- Panchetta (italian bacon cubs)
- Grana Padano (italian parmesan cheese the real one)
- 1 Onion
Preparation as follows:
Cut the onion in small cubes and fry the onion together with the bacon until soft. Set aside once finished
Boil the Spaghetti in the meantime
Mix together in a separat bowl, 2 eggs, Grana Padano (grated), 250ml single cream, a little bit of milk, salt (be careful with the salt as the parmesan cheese is salty already), pepper, a hint nut meg and a hint mild paprika.
Drain the boiled spaghetti and put them back to the pot, mix it with the cream mixture and heat it up for a few seconds than add the onion and bacon, serve with a little bit of parmesan cheese on top.
I hope you like it as much as I do. :-)
