Anyone know where to buy premium sausages i.e. not made from ground up animal hee haws... rather lean quality meat...

Olivers sells tasty sausages but they're mighty pricey and defrosted so no good to put in the freezer again. The price might suggest a better quality meat content...
We now make our own. Get the skins posted over from the UK and then churn out lots of top quality saussies. No dodgy bits go into the mix.

Well, apart from the deli sausage type, some Wellcomes sell "Valley Chef Chicken Franks". Factory made, sure, but great taste and no "hee haws", by which I assume you mean donkeys. ;)

I wasn't referring to donkeys... hee haws = chunks of ground up tendon, fat, and other 'meat byproducts' that I'd rather avoid

Olivers - wonderful sausages but terrible price. How can that be justified? I saw some other beauties in IFC City Super but at $52 for two I couldn't bring myself to buy them. Outrageous price.
Real German sausages are fine but rather tasteless and seem to have the wrong texture for me - but at least they can be assured of quality - not so with the normal HK BBQ sausage - made up from the sweepings off the floor in the abbatoir.
Making your own sounds a great idea - think I'll try it.

I don't imagine for a second that its possible to make sausages at home so stop fantasizing about it. It is true that Oliver’s have good ones plus Butcher King in Sai Kung - but all too much money. What about the butcher in Sai Kung behind Steamers. He has all frozen stuff (not just sausages) and in my experience everything is great (and cheap) apart from his minced beef which I suspect has Hee Haw s in it, if that means unidentifiable chewy bits that just go round and round in your mouth!

EXpatlady, why wouldn't it be possible for someone who has the time, a modicum of culinary skill and who enjoys food and cooking to make delicious sausages at home? With quality ingredients (which would preclude cheap frozen meat) and no unnecessary additives and fillers, they'd have to be heaps better both taste and health-wise than the offerings from Olivers, TCs, Butcher King's et cetera. If Dive bum could let us know where to order the skins from I'd love to get started...

Jushayward, where are the Li Kar shops that you refer to ? I have been in HK almost 8 years and have never seen them ! I don't like the sound of crab and egg sausages but the Cumberland brand sounds delicious. P.S.I don't have any children, but I suspect my neighbors' dog will like them.

I don't think Butcher Kings is as bad as some places for cost, I usually pay about $160 for 30.

I think it's the nature of the sausage to be composed of ground-up hooves, horns, hair, eyeballs, and general sweepings in them.

We got the name from a sausage seller in Fuengirola, Spain. The sausage world is a small one...
About GBP9.00 plus postage for 40m. That makes a lot of sausages. We have a Kitchenaid mixer with a sausage grinder attachment. It takes a couple of hours to make 40 or so sausages - we made three different types last time. All delicious - much better than Olivers and much cheaper. And we can freeze them.

Citisuper in IFC have some very expensive sausages but in the frozen section they have English Pork or Cumberland Sausages for $49 a bag of 12 and they taste good too.

I just picked up a pack of Chipolata sausages from the Hopewell Centre Taste. They also have Cumberland and other flavors quite reasonable costing.
BUT, can anyone tell me the ways to properly cook these sausages? I'm Asian and the truth is, I don't know that much about sausages. I know that they can be baked or boiled but for how long to ensure they are well-cooked. I'm serving them to small children. I'm only familiar with the already-cooked type and have no idea how to cook the uncooked type. Please help...

Leo's Fine Foods has NZ and Australian meat. 2814 0302. Great quality, excellent prices. The downside is that they are a wholesale place so their minimum quantities tend to be things like "one whole tenderloin". Worth it though. Also 24-48 hour order turnaround time.
