Everytime we are at the grocery store, there is a lady cooking the dried mushrooms. My little one LOVES them and can eat 6 or 7. The lady knows my daughtwer so well there now.
I finally broke down and bought a back of them. NOW,. the question is......... how do I cook them?
I don't know Cantonese and the lady there speaks very little English. She said cook in pot of oil, and something about some sugar and fish sauce or something.
Anyone know??

Jassy, to cook the Chinese Dried Mushrooms, you have to do the follow:
1) Soak the dried Chinese Mushrooms in cold water until they are soft - 30-60 mins
2) Cut the stems out
3) Use a small pot (which will fit all the Mushrooms you are planning to cook), and add 3 Tablespoon of light Soy Sauce, 2 Tablespoon of Dark Soy Sauce, 2 Tablespoon of Oyster Sauce, 1/2 Tablespoon of Sesame Oil and 2 Tablespoon of any Chinese Wine - boil this liquid
4) When this sauce is boiling, add all the Chinese Mushrooms FLAT in the cooking pot
5) Then add JUST ENOUGH Chicken Stock to cover all the mushrooms and turn the heat to SIMMER
6) This is what we called "BRAISING" method to the mushrooms
7) Add just a bit more Chicken Stock every 10-15 mins just to cover the mushrooms as the sauce will get thicken and reduced
8) Braise the WHOLE Chinese Mushroom for 45-60 Mins and taste the Sauce to see if its too salty, if so, just add enough water to dilute according to your taste
ENJOY!
