Hi, if I enter Hong Kong with a Canadian passport, can I leave with an French passport for a day to Macau and back? Will immigration allow that?

assuming you are on a tourists visa, you will need to exit using the same passport as you most recent entry. They will look for the most recent entry stamp to determine if you have overstayed.
