How much do you want to spend. The best tailors in Central is Ah Man Hing Cheong in the Mandarin but you will pay at least $9000 for a 2 piece. I am not sure what you get for $2,400 for Jacket and 2 pants, that would not even pay for reasonable cloth, it would clearly be an inferior chinese wool if wool at all.
The best tailors in HK is WW.Chan in the Burlington Arcade in TST, same arcade as Sam's but upstairs, totally different product that can't be compared. They are the only tailor in HK that do it all in house in HK. Price starting similar to Ah Man Hing Cheong

I think this depends on the time of the year, it's not always 35C here, besides you can get different weights of wool, there are plenty of 8oz to 10oz cloths that are fine, it all depends on the way the suit is contructed, the type of canvassing they use, assuming your tailor does not fuse it.

Please let us know how the suit turned out. They are a tourist place hence their sales scam on you, To be honest I am not impressed with the stuff on their website listed under suit craftmanship, it's awful looking with the exception of one photo that I know they stole off a Savile Row tailors site. There are some much better guys in TST (for example Lee Baron) but most in HK are pretty poor to be honest unless you spend closer to 10k. If you need any more help in the future I am pretty knowledgable on all this.
