Cheesecakes-how to tell its cooked?

My question is; How do you know when a baked cheesecake is cooked?


When I bake a cheesecake and use a skewer to check it is done, it always comes out with stuff on it. If I wait until there is nothing on the skewer, the top is brown and the cake tastes a bit dry (usually 30 minutes after the recommended cooking time). If take it out when the receipe recommends, I am worried it wont be cooked enough.


So is there a fool proof way of knowing when it is done, without the clean skewer and dark top?

I use cream cheese. Cheese is cheese, but it is the other stuff like raw eggs I would like to ensure is cooked.

It's cooked when it stops to wobble. Don't worry about the stuff, as long as it's firm to the touch, it should be okay. Let your cheesecake cool down, stick it in your fridge if possible. I would normally 2-4 at a time and deep freeze some, but I must say they don't last that long! Too many asking for seconds.

No prob. Good luck. I got a very good recipe in case you wanted some "alternatives"-- it's very soft, no base.... just melt in the mouth goodness.

May be a little late in the response, but one way to make sure your cheesecake doesn't dry out while cooking is to put a pan of boiling water into the oven as well. I usually put it below the cheesecake on the next rung in the oven. This allows the cake to bake without drying out. Also, when a cheesecake is done, the outside will be firm but the center will wobble a bit. You should just take it out and put it in the fridge to set.

Thanks abungabird. The wobble test certainly helped, but I will try the boiling water next time to see if that makes a more moist cake.

i've never used eggs in my cheesecakes.. just cream cheese and sour cream and sometimes with blueberries.. and no need to be in the oven, just freeze it~
