I love the IFC terrace in the evening. Having a drink and some quiet conversation while watching the harbour and the skyline is one of my favourite things to do.
I am also a big fan of the hiking trails. Getting up to the top of, say, Jardine's Lookout or Violet Hill after a tough climb and reveling in the stupendous view is just heaven.

rollerblading from Shatin to Tai Mei Tuk or Tai Po all going along waterfront path. Can stop for lunch in Science Park or in Tai Mei Tuk. Expansive views, fresh air and speed! Just don't go during peak hours where there are lots of bicycles. Here's a mini-rant, too many people don't have any cycling etiquette (make that just plain common sense) here. Others just don't seem to know how to operate a bicycle.

Double Haven by sailing yacht. Hike up heartbreak hill before dawn to watch the sun rise

Walking...walking anywhere, combined with interacting with local HK people wherever possible. One favourite walk was on Lamma - in one side (YSW), walk, seafood lunch (esp salt & pepper squid at Lamma Hilton), out the other side (SKW). Alas all that before husband's knee went!
