the baby rice tells you how much rice to milk but it doesn't say how much I should be giving?
at the moment i am giving 4 oz milk with double the amount of rice they say as it was too thin and sometimes i add puree pear 2 teaspoons, she doesn't eat it all but a few times she has
also every new food is 2 teaspoons topped up with milk???? will giving her more do her any damage, she seemed to want more
introducing foods, every three days okay or should i wait a week per food?

I found both of these books really helpful when I started weaning my daughter:

I think the important thing is to be guided by your baby and never force her to eat when she has had enough. Everyone has a different appetite so it's really difficult to say how much your baby should eat. It also really depends on the age at which you first introduced solid food.
Don't rush introducing new food. My baby's doctor recommending introducing a new food every week but I actually did about 3 days which was fine. Again, it really depends on your baby's age. If she is over 6 months you want to go through the first good groups faster. If she is 4/5 months you can take it more slowly.

As anonymous2008 says, let baby decide. If she is gaining weight and seems normal, she'll be fine. Babies don't starve themselves and they don't really gorge either.
Having said that, we have to cut down a bit on our #2's portions. She'll eat EVERYTHING she sees on the plate. Now, #1 is the opposite, so in the beginning we didn't think about it and gave #2 the same size portions. #1 would eat a quarter, #2 eats it all. #2 starts looking rounder and rounder... :)

As long as baby is eating happily, let her eat as much as she wants. In general, 3 days is enough between new foods unless there are circumstances [allergies in family, or reactions to certain foods, etc] that suggest otherwise.
Just to give a range: our #1 would eat about 3-4 cubes per meal of homemade baby food; our #2 would eat 10-12. Both are healthy and good eaters [meaning that they eat plenty of healthy foods without a lot of fuss, but they do not eat when they are not hungry -- unless, of course, the food in question is something like birthday cake].
