Is it possible to buy local fresh duck breast fillets only, (not the whole bird)? I really don't like the frozen, smoked or ready-cooked ones that seem watery and processed and have a frankfurter taste and rubbery texture. Maybe I haven't looked hard enough but I haven't seen fresh, raw local fillets in ten years here, and the imported ones I've bought cost $$$, which seems daft when there are so many (albeit skinny) ducks in China. I am sure it's down to the Chinese butchering methods as the vast majority of customers require different cuts to what most people are used to in the west, but it would be good if there's a local retailer somewhere catering for western recipes as well as Chinese ones?
