I was wondering whether or not it was normal for spouses to find work in HK?

No easy answer. It depends entirely on her qualifications, experience, skills.
What does your spouse do now? If she works in finance for example it can be pretty easy to find a job. If she is a shop clerk it can be very difficult.
One big barrier to many jobs is language, for example in any form of customer service.
Many "trailing spouses" set up their own businesses. The success rate, and especially profitability, varies from abysmal to "can support family". My guess is most don't make a lot of money but can be seen more as a hobby.
