Take the long way home

At the end of March we are leaving HK after 16 years. Rather than simply heading to the Airport I want to soften the shock on the wife by taking her on a scenic route home - essentially HK -> Vietnam -> Cambodia -> Thailand -> Singapore and then flight back to Europe.

Looking for suggesting for actual places to stop at in those places and hotels to stay at.
